Besides What You See….

Ok, confession: I love musicals.

Like, obsessively, ridiculously love musicals.

Like, when I drive home at 5 am in the morning from my night shifts, I’ll turn off the radio and sing songs from Funny Girl or The Sound of Music, or Frozen to keep me entertained and awake.

My mom introduced me to The Sound of Music when I was about 5 years old, and it’s still one of my very favorite stories and musicals of all time!

This post was inspired by the song Maria sings:

“Strength doesn’t lie in numbers
Strength doesn’t lie in wealth
Strength lies in nights of peaceful slumbers
When you wake up — Wake Up!

It tells me all I trust I lead my heart to
All I trust becomes my own
I have confidence in confidence alone

I have confidence in confidence alone

I have always loved those lines, but as I learned to love myself over the years, it dawned on me how this little musical affirmation makes such a difference for me!

People remark on my confidence pretty frequently, and it always surprises me. In my ideal world, we would all be confident and ambitious people, who wake up ready to kick ass, and take names! “Can’t,” “won’t,” “shouldn’t” and other hesitant words would be abolished from our vocabularies, and we’d put our big girl (or boy) panties on and MAKE. THINGS. HAPPEN.

But, alas, we are only human. we aren’t sure if we can pull off a certain look, quit a job to chase our dreams, or maybe even make rent next month. The list goes on, and on!

I really value the fact that people see me as a strong, and confident person. I am those things. But rest assured, I have bad days, financial problems, personal struggles, and insecurities too! I tend to be more vulnerable and candid with these things, because I think it’s very important for people to know that someone with a past like mine-filled with emotional abuse, physical abuse, homelessness, and other various struggles- is surviving merely because of a choice. Maybe even because I live in a world that assumes those things will break me, or make me weak.

I am a LOT of things…but weak is generally only used to describe me when cookies are involved (no shame).

I genuinely believe that confidence is something I put on every day. It’s that coat of mascara to make you look a little more awake, or that statement necklace you use to punch up a basic ensemble. It’s the finishing touch to make you feel a little more…complete. And if you do this everyday, soon, it becomes second nature, and you find yourself walking taller, smiling at more strangers, and smiling to yourself because you feel wonderful.

Because you feel like a powerful, wonderful YOU.

Life has issued me many challenges, and I face more and more of them everyday. But knowing that you have those beautiful, strong qualities inside you makes it a bit better. Take a minute each day to “put your confidence on,” and I promise you’ll see some really positive changes. I am at the point now where I feel confident just because I wear matching bra and panty sets (thank you, OCD!).

You deserve to be treated like the amazing person you are. But you have to lead by example, and show the world what you deserve. It starts with you! And if it’s a corny
“Sound of Music” verse (or a Lil’ Wayne freestyle, which also works wonders for me, as well), then SO BE IT!

Sometimes, you just have to fake it until you make it. And that is perfectly fine, if it helps you build that confidence in yourself. Own it, rock it, and SHOW THEM HOW AMAZING YOU ARE!

Simple Broiled Salmon and a Side Dish to Die For!

Tonight was good eats, for sure!

Simple Broiled Salmon

What You Need:

Salmon fillet(s) (I bought one that was just short of 1 lb. and ended up getting 3 portions from it. You could do it individually, if you prefer)

Fresh chives (chopped)

Cilantro (chopped or dried. I used dried because I had it on hand)

Garlic Salt

Fresh ground pepper

1 lemon (juice of half, and slice the rest)

What You Do:

Season salmon fillet(s) with garlic salt, pepper, chives and cilantro. Squeeze your 1/2 lemon over it, and put in heated skillet (I had mine on medium high for about 3 minutes before hand to get it really hot). You want to get a pretty crust on both sides of the fillet… for the size of mine, it was about two minutes per side, put lemon slices on top of fillet, and then transfer skillet to oven. I preheated the oven to a broil on 375 degrees.

Broil fillet for about 5-7 minutes (time may vary depending on size of fillet. Keep and eye on it to make sure!). Fish is ready when flaky and has a soft pink color (not as bright and salmon-y colored, in other words).

This salmon is great with salad, or on it’s own.

I am trying to get into this quinoa craze. It seems like a no-brainer for people like me, because it’s a protein packed seed, versus a whole grain. It is actually ridiculously versatile, as well, which helps make it not be a boring complement to your favorite dishes!

Tonight, I used some pantry staples and a little produce I picked up to doctor some quinoa into a delectable side dish to make my salmon, and my tummy, happy!

Sondra’s Super Quinoa Salad

What You Need:

8 oz quinoa, cooked (I use the pre-cooked organic kind from Trader Joe’s in the freezer section It’s 3.99 for (2) 8 oz packages and just needs 4 minutes in the microwave. Presto! You’re a magician)!

1/3 cucumber, peeled and diced

2 tbsp. Sundried Tomatoes, chopped coarsely

2 oz roasted bell pepper (I used some from a jar of red/yellow mix I got at TJ’s packed in water for $1.99), chopped

Garlic Salt

Fresh ground pepper

1 tbsp. EVOO

1 tsp. Lime juice

1 tbsp. Mixed garlic

What You Do:

Basically, all you need to do is mix this all up in a bowl.

Boom. You’re done. Thank me later.

Super tasty, really good for you, and this made about two servings for me. I put some in my container for lunch with the salmon, and some in a container in the fridge for dinner later. It’s great warm or cold, and you could easily multiply the recipe for a crowd… it’d be awesome for a get-together, a vegetarian option, or a snack! I am actually in love with it… and I’m not big on quinoa to begin with!

What else did I pack with it? A couple of Cutie mandarin oranges. I am slightly addicted lately, and I don’t mind, because they’re a great alternative to the other sweets I could be inhaling. Besides, all the Vitamin C should keep me from getting sick anytime soon!

#YWM2013 Day Two!

Ok. So, yesterday?

Yup. Totally amazing (or as my cousin Kirsten would say, “totes amaze!” Unfortunately,  I don’t sound sound as chic as her when I try that)!!!!

Sean and I attended some amazing educational sessions, from ones about Self Perception with the AMAZING Merrill Littleberry (Google her. Now.), to Advocacy and what we a can to to help stop ignorance towards Obesity!

I met fellow blogger, “The Waning Woman!” She came up to Sean and I between sessions to say hi, which I thought was pretty awesome!

It’s about 114 degrees here in Phoenix. Loosely translated,  that means that as Sean said “it’s like having a man’s hot breath all over your body!”…every time you walk out the door. You’re welcome for that charming simile!

Despite the heat, I am freezing everytime I enter the conference room, and as a result I am all congested and have a sore throat. Thank goodness for the coffee and tea station set up outside the educational session rooms all day. More tea and honey with breakfast!!

Today, we are thinking about heading to the resort water park during one of the breaks. It is super close to our suite, and we get free access to it all weekend as part of the special convention rate we got staying here at The Arizona Grand Resort and Spa. Golf course, 4 or 5 restaurants, huge conference amenities,  golf cart pickup and drop off around the grounds…all that they DON’T have is a casino, which is likely for the best. 😉

He evening ended last night at the Welcoming Ceremonies beach-themed, buffet-dinner party (3 words: frozen yogurt bar. Yummy!), where the OAC announced next year’s convention location!!

How exciting is THAT??!! Sean and I are already talking about the possibilities and committing to working out our finances to make sure we can go (we should have our own place by then, so we will have to be even MORE responsible) to make our fun trips and experiences a priority.

I am so, so, so excited to be in attendance at this amazing convention.
Today’s agenda? Introductions with the OAC President and CEO (SUCH an inspring individual), learning more about Advocacy Trip scholarships, getting more materials for my healthcare providers from the OAC to distribute back home in Cali, and not dying of Heat Stroke!

Sean and I were fortunate enough to meet some nice people at dinner laat night who were here representing the conventions Platinum Sponsor, Eisai Pharmaceuticals. We are excited to stop by their booth in the vendor area today and get health screenings! They are providing a copy to each participant to take back to their Doctor, to catalyst a discussion about their weight. I am in serious awe of the products/programs they create, and can’t wait to learn more!

I guess it would be way easier to get the say started if I get up and do my hair, huh?
