Photo Reveal: Korin at Wonderland Boudoir!

I had a blast back in April, modeling for The Boudoir Divas at their 2014 Boudoir Retreat. I met some amazing women on a journey to begin/improve their Boudoir skills, and I am so excited at the fact that photographers have been kind enough to share the images (they certainly don’t have to) and it’s so fun for me to share them with you! I am inspired every time I enter that studio. YOU ARE BEAUTIFUL. It doesn’t matter what a scale says.

Clean Eating Challenge Day 2 & 3!

It’s been a doozy!

The hard parts? NOT going to Starbucks for my second wind after my 3 hour lunch break, not being able to indulge in bakery fresh cookies (I snuck one yesterday, and told myself the calories don’t count if no one sees me. I am terrible, and my detoxing tummy made me feel it!), and well…. that’s about it. Not really bad at all!

The good things? My water intake is way up, I feel more energized in the morning, and I know where each and every ingredient in my meals comes from… plus, I am cooking more! Cooking is one of my passions, and it’s really therapeutic after a day of insanity! I’m glad this motivates (and um, REQUIRES) me to do so!

Day 2 was awesome. I finally had overnight oats. And I LOVE them! So much so, that I substituted the day 3 yogurt parfait for another batch of overnight oats…. because otherwise, plain Greek yogurt and I are NOT friends.

Day 2 Recipes are here.  Day two was a little bland after breakfast, mainly because I was all excited for the cabbage wraps… but I am allergic to mango and avocado. So…I didn’t take the time to think of worthy substitutes. I bought an avocado anyways, but chickened out when I realized I was out of Benadryl and too lazy to go to the store. 🙂

Day 3 Recipes are here. Day 3 was awesome! The Asian chicken salad with leftover cabbage and almonds and chicken was great… and I really enjoyed the vinaigrette too! I forgot to add the tomatoes to the salad… so when I make it again after the challenge, I’ll remember that part! I skipped the yogurt parfait today in favor of making another batch of overnight oats… because. I love them! My new favorite healthy breakfast… and it would make a great snack, too! It’s really filling (thanks to those oats and chia seeds), full of protein (as a WLS post-op I need 60-80 grams per day), and I eat it slowly to savor it. It took me so long to eat it at work this morning, I skipped the avocado snack.

A quick tip? Lentils are a lengthy process! Prep them ahead of time… or cheat a little bit! I have always bought the Trader Joe’s steamed lentils in the refrigerated section with the other prepped veggies. For the sake of showing you all how easy the challenge can be, I followed the Buzz Feed recipe, but you could easily doctor up the already prepped lentils.

Same goes for the quinoa…TJ’s has it in the freezer section, and it’s ready after 2 minutes in the microwave!

Overall, the Buzz Feed Clean Eating Challenge has really been…..FUN! I love that the menu is so structured, without being daunting and skimpy. As a matter of fact, I am eating about 1/2 of the meal serving, which means I am eating about half of the nutritional value… so I am keeping an eye on that in the case I need to double up other supplements.

Clean Eating Challenge, Day 1!

Today was a good day!

If you don’t count the 10 minutes I spent in the breakroom at lunch talking about all the food I CAN’T eat, it was at great day overall!

Day 1 recipes were today’s menu, and I found myself completely satisfied. As a matter of fact, I ate about half of every recipe, because I was so full – I didn’t even eat this evenings snack/dessert! Dinner was steamed kale with quinoa, chicken breast, and an orange vinaigrette with things like apple cider vinegar and olive oil. It was really good…I’m not even a big kale fan. The simple Buzz Feed steaming instructions helped a LOT.

I especially enjoy that each day has the next day prep as needed. After I whipped up my awesome dinner, I prepped my overnight oats and stuck them in the fridge and breakfast will be a cinch in the morning. Plus, today’s dinner was half of what was prepared,  and the other half is for lunch tomorrow!  Saves me time, and makes my tummy happy!

Tomorrow is Day 2, and the Day 2 Recipes look great, also! I am really excited for the dinner menu, sans mango (I’m allergic).

Join me on the Buzzfeed 14 Day Clean Eating Challenge!

Let’s be real: When you hear the words “gluten free” or “low carb” in relation to eating or dieting…it’s an instant turn off! I love the Buzz Feed 14 Day Clean Eating Challenge concept,  mainly because the disclaimer that it’s both of those things didn’t fully register until AFTER I got super excited about it!

When you see the methodical, practical, and easy to follow guidelines for this challenge, it seems so EASY! The photos of food that had me salivating in all of their delicious looking glory didn’t hurt, either!

Buzz Feed has done all of the hard work for us. They’ve split the grocery list into two weeks, broken down each day into menus AND recipes with step by step instructions and photos,  and even gone so far as to provide guidelines for meals that you end up replacing with eating out!

I started my grocery shopping on Sunday, getting most of my dry ingredients, and today I got my meat and produce to start meal prep this evening and officially begin the challenge tomorrow. What I love is how flexible this challenge actually is. While you need to follow the menu day by day (leftovers are used for the next day withe most of the daily menus), you don’t have to start Sat/Sun as it does.  I tailored it to fit my payday schedule and the schedules of those doing the challenge with me!

So, today is “Day 0,”  and I followed instructions accordingly for prep.

I’ll be posting daily with the link to the corresponding day of the challenge,  so you can check out the ingredients and recipes…maybe you want to do the whole challenge, maybe you just want some new healthy ideas for meals.

We will be following some of the #tiu Tone It Up workouts while we go, with 4 scheduled work outs per week, also! Plus, walks and stairs at the beach! That new bikini I ordered from Swimsuitsforall.com better watch out! 🙂

Wish me luck! I’m hoping not only for a few pounds lost,  but for some new energy and excitement, too!

I generally have very mixed emotions about The Vitamin Shoppe, simply because on the 3 occasions Sean has taken me there to look at supplements, everyone acts too busy to help us or answer questions about which of the millions may be suitable for us. However, I was very excited to see that they have this new Weight Management line, and I can’t wait to try the shake flavors and see if they are tasty enough to make this a regular part of my life!

Along with the Next Step shakes, there is a shaker bottle too! I love that the shaker mechanism shape is that of a jack! I can’t wait to put this baby to use! Plus it’s a super fun color!

I love, love LOVE Müller Corner Greek yogurt! There is one with little dark chocolate flecks and cherry compote…. and I’m not generally crazy about black cherries or dark chocolate…. but it’s SO good. I think it’s awesome that this product is getting some more exposure. The low fat yogurt with fun toppings or fruit really making eating healthy more enjoyable!

So, as you can see, this box is full of goodies to help make a healthy lifestyle even more enjoyable! I will gradually share more about these products as I use them, and I can’t wait to find some new favorite items in the process (PROFOOT orthotics are only $10.49 a pair! Can you imagine how much more inclined to be to support your feet at a great price like that?)!
