Weekly Wrap Up…and a Recipe!


Whew!

All I have to say is: T.G.I.F!

This week seemed to fly by and take it’s sweet time all at once!

Let’s recap:

Monday- Halloween! I had a blast wearing my Wonder Woman costume to work! Now, I am just waiting for the company meeting on Monday to see who won the costume contest. I’m not going to lie…I DESERVE to win that dang contest, and I’ll be a little bitter if I don’t! Also, after work, I headed to my boss’ house for dinner and some chillin around the fire pit. I am still working on a master plan to steal her backyard and somehow implant it to our tiny patio at the condo….

Tuesday-I was ridiculously lazy. Did some blogging, handled some business, caught up on last week’s shows I missed. I got the idea to make some soup, and hit the grocery store for all the fixins’. Then I got home, and learned that we were actually going to the Comedy Store for a $2 Tuesday event, and abandoned the soup….and after the show? Went to a little mexican food hut and ate rolled tacos at the beach! Gooood times!

Wednesday- I had a long day at work, and then I came home and made the afforementioned soup!

I get a little ridiculous when I am in the kitchen, and just kinda use what I like. I will do my best to break it down, and lay it out for you. I halved my usual ingredients, just because I can’t eat much these days. This recipe makes about 6-8 cups of soup, and is even BETTER as leftovers! And if you know me, you know I really don’t do leftovers. So that, is a huge deal!

Sondra’s Turkey Meatball Soup

1-1.5 lbs ground turkey (you can be lazy and buy pre-made turkey meatballs! Trader Joe’s makes some awesome ones!)

1/2 large yellow onion

1 zucchini

1 yellow squash

4 cups fresh spinach

1 handful fresh basil, chopped

2 carrots (I bought carrot “chips” pre-sliced in a bag, you can use baby carrots, etc)

2 cans diced tomatoes, italian style (I cheat to make the soup faster, rather than stew my own tomatoes prior)

2 red potatoes

3 cloves garlic, minced

32 oz chicken stock

Instructions:

Ok. So, you need a skillet. Take your ground turkey and make meatballs. I make mine a bit on the smaller side, due to portion restrictions. Generally, (3) 1-1/5″ meatballs have about 15 grams of protein. Brown meatballs in a skillet with about 2 tbsps. olive oil.  If you use frozen pre-made meatballs, you can just toss them in the soup and skip this step.

While those are getting started, I go ahead and chop my veggies. Nothing too fancy, just some slicing and dicing to get things to a bit-sized state.

In your pot, use some olive oil and start browning the onions and garlic. After a few minutes, I add the spinach, and then add my chicken stock. At this point, you can kinda just toss everything in the pot, and go nuts! I added some salt, pepper, and a bay leaf.

After the meatballs are done, drain them on a paper towel, and add to soup. Let simmer for about 15 minutes, and voila! SOUP!

I like to top mine off with  a little shaved parmesan, and pepper. If you like a little kick, some tabasco sauce or hot sauce could easily add some zing!

For a soup, this is relatively quick, and sooooo worth the wait! I get home most weeknights around 8:15 or 8:30, and I was in bed with a bowl watching Pan Am by 9:30. Not too shabby! Great for the cold weather that’s just come around, and even better for a quick, easy, and impressive dinner for guests. People commented on being able to smell the deliciousness from all over the office when I heated up the leftovers at work on Thursday afternoon! 🙂

Thursday- I was sending photos of Chris Brown and his ridiculous green spandex suit post on Wednesday, and wouldn’t you know? I am going to attend his concert this Sunday! I was still tickled by this photo all day Thursday. And I can’t get past his obscene obsession with sharing his penis with the world. What’s this guy’s deal? However, knowing I am going to a concert this weekend made Thursday easier! Also, I cleaned UP at GNC purchasing some of the ready-to-drink GNC Total Lean Shakes Trina and I recently discovered, and also got some New Whey Protein Shots. Reviews coming soon. Best purchase of the day, however? Furry leopard slippers. My bathroom is FREEZING in the morning, and they are adorable!

Friday- More soup for lunch. Craziness at work. Couldn’t wait to get home, put on some sweats and said furry slippers, and blog about my soup recipe.

This weekend? Babysitting one of the chiropractors’ adorable baby, heading to The Shout House dueling piano bar downtown, and then the Chris Brown/Tyga/Bow Wow/T-Pain concert on Sunday. Rain, rain….go away! Actually….you can stay until Sunday. 🙂
